Breakfast can be a hard meal when backpacking – but this innovative dish will fuel you with plant-based goodness.
Cherry and Hemp Breakfast Rice
Ingredients, packed in snack bag:
- ½ cup instant white rice
- ¼ cup dried cherries
- ¼ cup dry coconut milk powder
- ½ tsp ground cinnamon
- Pinch sea salt
Bring ½ cup + 2 Tbsp water to a boil in a small pot with 2 sticks worth of the date nectar or honey. Add in dry ingredients, stir and cover. Take off heat and let sit for 10 minutes. If at altitude, or in cooler weather, insulate with a pot cozy.
Stir well, top with hemp seeds and remaining stick of sweetener.
