Cast Iron Strawberry Cobbler

I based this strawberry cobbler recipe off of the “mixed berry cobbler” in One Pan To Rule Them All, on page 227. This cookbook has really encouraged me to use my cast iron pans so much more! Our home has a gas range, which has been a huge change for me. May we never have a glass top stove again…..

You can use any berry or fruit you like, making this a solid recipe to have on hand. Best of all, it can bake while you eat dinner.

Cast Iron Strawberry Cobbler

Ingredients:

  • 1 16-ounce bag frozen strawberries (unsweetened)
  • ½ cup light brown sugar
  • 1 Tbsp corn starch
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp fine sea salt
  • 6 Tbsp unsalted butter, cold, diced
  • 3/8 cup buttermilk
  • 1 Tbsp granulated sugar
  • 8″ cast iron skillet

Directions:

Preheat the oven to 425°.

Mix berries, brown sugar, and cornstarch in a mixing bowl. Pour berry mixture into skillet and roast int he oven for 15 minutes, Stir halfway thorough to ensure berries are evenly warmed.

To prepare the dough, in a large mixing bowl, mix flour, baking powder, and salt. Add the diced butter and incorporate into the flour mixture and squeeze with your fingertips until the pieces of butter are smaller than peas. Add buttermilk and mix well until dough forms.

Remove warm berry mixture from the oven. Gently place dollops of dough around the surface of the berry mixture. Use a spoon to sprinkle sugar on top of cobbler topping.

Bake cobbler in the oven 20 to 30 minutes, until the topping is golden grown. Serve warm.

Serves…well…depends on how sharing you feel 😉
