Simple and easy to make. High fat keto friendly snack, for when you need a boost of fat to fill you up.
It reminds me of the filling for a Mounds bar. I’d suppose one could also drizzle sugar free chocolate syrup on top for that effect if desired.
Keto Coconut Bars
- 12 ounces (3 cups) shredded unsweetened coconut
- 1 cup coconut oil, melted then measured
- ¼ cup monk fruit “maple” syrup
- Pinch sea salt
Line an 8×8″ glass baking pan with parchment paper.
Melt the coconut oil in a glass measuring cup (30 seconds or less in the microwave will melt it).
Add the coconut to a medium mixing bowl.
Add the coconut oil, maple syrup and the sea salt to the coconut. Using a spatula, stir until well mixed.
Scrape into the pan, press flat with the spatula. Take a bit of parchment paper, and use it to press down firmly with your palm to further pack the coconut down.
Chill in the refrigerator until firm, then cut into small pieces.
Store in an airtight container in the fridge.
