Basic 1.5 Pound Bread Machine White Bread

This makes a 1½ pound loaf of bread and will work in most bread machines. It’s a light loaf, with a crispy, flaky crust. Great for sandwiches. We make our bread in a Zojirushi machine.

Basic 1.5 Pound Bread Machine White Bread

Ingredients:

  • ¾ cup + 2 Tbsp water
  • 2 Tbsp butter, softened and sliced
  • 380 grams all-purpose flour
  • 1 tsp fine sea salt
  • 4 tsp granulated sugar
  • ¼ cup dry milk
  • 2¼ tsp active dry yeast

Directions:

Add the water and butter to the bread machine*.

Add dry ingredients, topping with the yeast.

Set for a basic loaf (or 1½ pound loaf depending on your machine). We use a Zojirushi, which preheats the ingredients before starting the cycle.

Once baked, take out and let cool on a rack. Store sealed in a plastic bread bag, use with 24 hours for best taste.

*If your bread machine doesn’t preheat, use water at the temperature recommended for your model.

Bread Machine Country Bread

It took me a couple tries to perfect this loaf of bread, to get the flour ratio dialed in. That might be the only downside to bread machines, is that since you are not kneading the dough, you might not add enough in. But at the same time, the base ingredients are cheap in bulk, so if I feed the compost pile once in awhile, I can live with that. Because I love  bread machines. They make it so easy to have a fresh loaf of bread that has only clean ingredients, and costs just a fraction of a loaf of even cheap bread.

Do weigh flour. This is one area of baking I never back down from.

This loaf has the darkness molasses brings, and the heartiness of oats. It pairs well with butter and a hot bowl of soup on these cold nights.

Bread Machine Country Bread (2 pound loaf)

Ingredients:

  • 1½ cups water
  • 2 Tbsp olive or avocado oil
  • 1/3 cup molasses
  • 570 grams all-purpose flour
  • 2/3 cup rolled oats
  • 2 tsp fine sea salt
  • 1 Tbsp active dry yeast

Directions:

If using a Zojirushi bread machine:

Add the water, oil and molasses to the bread pan. Add the oats, salt and flour. Top with the yeast.

Turn on machine for a basic loaf (this is a 2 pound loaf).

Once baked, remove immediately and knock out of pan, let cool on rack before slicing. Store bagged, use within 24 hours for best taste.

If using a different brand of machine, make sure it can handle a 2 pound loaf. Follow directions for temperature of water to use, if your machine doesn’t preheat the liquids (ours does). Water and liquids first, then dry, ending with yeast on top.

Potato Bread For The Bread Machine

The recipe for herb bread makes a 2 pound loaf, perfect for going along with dinner, or for sandwich bread. We use a Zojirushi Bread Machine, that has a 2 pound capacity, but this recipe will work as long as your machine can handle up to 2 pounds. I like my Zoji as it produces a normal looking loaf of bread (instead of a high loaf). This loaf came out a little sunken on top, but was none the less delicious. Ugly, but tasty works for me.

Potato and Rosemary Bread

Ingredients:

  • 1 2/3 cups water*
  • 2 Tbsp olive oil
  • 480 grams all-purpose flour (4 cups)
  • 2/3 cup instant mashed potatoes (dry)
  • 1 Tbsp sugar
  • 1½ tsp fine sea salt
  • 2 tsp dry active yeast

Directions:

Add the ingredients in order listed. Set machine for a basic loaf.

Remove once baked promptly, and cool on a wire rack. Store cooled bread in a plastic bread bag.

*If using a bread machine that doesn’t warm the liquid, be sure to use the recommended temperature for your water.

Makes 1 loaf.

  • Slice when cool and freeze for later use, it thaws quickly
