Bread Machine Cornmeal Cranberry Bread

Cranberries produce an interesting loaf of bread. Unlike raisins, the cranberries are tart enough to keep the loaf from being a sweet dessert bread.

If you want dark brown bread, use molasses; use honey for a light-colored loaf. We used molasses because of its deep flavor.

Bread Machine Cornmeal Cranberry Bread

Ingredients:

  • 1 cup + 1 Tbsp water
  • 3 Tbsp molasses or honey
  • 2 Tbsp butter, diced up
  • 390 grams of all-purpose flour
  • 1/3 cup cornmeal
  • 1½ tsp fine sea salt
  • 2 tsp bread machine or quick-rise yeast
  • ½ cup dried cranberries

Directions:

We use a Zojirushi bread machine, which heats the ingredients. If using a different bread machine, follow the machine’s directions for water temperature.

Ass ingredients in the order listed to the machine, but do not add the cranberries yet. Set for a 1½ pound loaf, White Basic with a Medium crust.

As the dough starts to knead and all the flour is mixed in, add in the cranberries.

Once baked, remove it and let it cool on a wire rack. Store once cooled in a bread bag.

Makes one 1½ pound loaf.

Bread Machine Parmesan Olive Bread

This bread is nearly a meal, especially if smeared with soft butter. It’s a loaf that won’t last long once it’s tasted. It would pair so well with a stew or hearty soup on these last cold winter evenings.

Ingredients:

  • 1 cup + 2 Tbsp water
  • 1 Tbsp olive oil
  • 1 2¼-ounce can of sliced olives*
  • 2/3 cup grated Parmesan (use real Parmesan cheese, not the green can type)
  • 390 grams of all-purpose or bread flour
  • 2 Tbsp dry milk
  • 1 Tbsp granulated sugar
  • 1¼ tsp fine sea salt
  • 1 tsp granulated garlic
  • 2 tsp bread machine or quick-rise yeast

Directions:

*Drain the olives. Lay them on multiple layers of paper towels and blot out as much moisture as possible.

Add the ingredients in the order listed, ensuring the yeast sits on the flour.

Set machine for White/Basic and medium crust.

Remove after baking, and let cook on a wire rack. Store in a bread bag.

Notes:

We use a Zojirushi bread machine, which heats the water. If you are using a different machine, follow the directions for setting the water temperature.

Because the moisture in the olives can vary from person to person when the bread is kneaded, check it in case you need to add more flour (if the dough looks wet). I started out with 360 grams of flour, but I added another 30 grams to get a good-looking dough, for 390 grams total.

Bread Machine Rosemary Potato Bread

A light and airy 1½ pound loaf of bread is easily made in your bread machine. Fresh bread requires only a few minutes of hands-on work. Then, walk away for 3 hours while your bread machine does the hard work for you. Delicious bread is waiting for you to enjoy.

Unlike this bread, which is sold as “freshly baked,” it was baked on March 6th and sold until the 10th. The photo was taken yesterday, on the 10th. Four-day-old bread isn’t fresh, and if you had homemade bread four days out, it would be rock hard and not edible—which is how bread should be!

While the ingredients are pretty straightforward (nearly all ground white wheat flour contains vitamins added to prevent birth defects in the US), cheap soybean oil gives pause; a loaf costs $4.49 and is the equivalent of a 1½ pound loaf made at home. (The soybean oil is also why the loaf carries a bioengineered notice.) Making bread is simple, whether by hand or using a bread machine like I often do. And it costs very little to make bread.

We dried rosemary last summer for the rosemary in this loaf. When you pick your rosemary, break off branches and place them in a clean brown paper bag. Let it sit in there until it is fully dry, then strip off the branch. Store the rosemary in a glass mason jar out of light and heat to preserve it. Air-dried rosemary has much more aroma and taste than commercially dried (which often looks like pale pine needles!). Depending on your variety, it may also have a high content of essential oils, as mine does. If your rosemary is pale/hard, you may need to whirl it in a blender to break it up.

  • ½ cup dry instant mashed potatoes
  • 1 Tbsp dried rosemary, crumbled
  • 1 TBsp granulated sugar
  • 1½ tsp fine sea salt
  • 2 tsp bread machine or quick-rise yeast

Directions:

Add ingredients in the order listed.

We use a Zojirushi bread machine, which heats the ingredients. Using a standard bread machine, use the temperature your machine calls for the water to be.

Set the machine to Basic/White and a medium crust. If your machine asks for size, it is a 1½ pound loaf.

After baking, remove the bread and let it cool on a wire rack. Then, store it in a bread bag.

Makes one loaf.

I recently saw a cookbook that grabbed my attention: The No-Fuss Bread Machine Cookbook: Hands-Off Recipes For Perfect Homemade Bread. It’s been out for a few years, so I am glad I came across it.

The No-Fuss Bread Machine Cookbook

When life gets busy, our bread machine is my savior. Putting the ingredients in, walking away while I homeschool the boys, and working on the homestead are everything. Come back 4 hours later to a perfect loaf of bread, especially with how our house runs chilly in winter. It really makes lunch that much simpler.

I was very excited to have many new recipes to try. The book is straightforward to follow and offers three sizes of loaves for each recipe so that you can use a 1-pound, 1½-pound, or 2-pound machine.

This cookbook has many bread options, from regular bread to spice bread, fruit bread, cheese bread, vegetable bread, holiday bread, and even how to start sourdough bread in your bread machine.

I love getting inspired. And it’s just what I needed as winter slides into spring, and I am so busy.

The recipe I chose to try is a rich egg bread, which is very indulgent. Very soft indeed. This recipe alone made going thru this cookbook worth it.

Soft Egg Bread

Ingredients:

  • 1 cup milk*
  • 5 Tbsp butter*
  • 3 eggs*
  • 1/3 cup granulated sugar
  • 2 tsp fine sea salt
  • 4 cups all-purpose or bread flour (480 grams)
  • 1½ tsp bread machine or quick-rise yeast

Directions:

Add ingredients as listed or in the order your bread machine calls for.

Set for Basic/White cycle and medium crust.

Once baked, remove it promptly and let it cool on a wire rack.

Store in a bread bag.

*We use a Zojirushi bread machine, which has a preheating cycle. If your bread machine doesn’t do this:

Milk at 80-90*. The butter melted and cooled down. Eggs at room temperature.

Makes one 2-pound loaf.

Bread Machine: Spiced Molasses Bread

This bread machine recipe for Spiced Molasses Bread is a smaller loaf, 1½ pounds, making it accessible for most bread machines. We make bread in our Zojirushi bread machine, which produces a standard-size loaf of bread in the 2 to 2½ pound range. The smaller loaves can come out a bit misshapen but still taste fine. If you notice this happening, you can gently shape the loaf and spread it out after the second kneading.

This is a sweeter loaf. It works with butter, savory, or sweet toppings. It reminds me a bit of the “sweet brown bread” served in their bread basket at a certain restaurant chain.

Spiced Molasses Bread

Ingredients:

  • ¾ cup water*
  • ¼ cup molasses
  • 2 Tbsp unsalted butter*
  • 1 tsp fresh lemon peel, zested
  • 3 cups all-purpose or bread flour (360 grams)
  • 1 tsp fine sea salt
  • 1 tsp dry ground ginger
  • ½ tsp ground cinnamon
  • 1½ tsp bread machine or quick-rising yeast

Directions:

Add the dry ingredients in the order your bread machine calls for.

*Our bread machine heats the liquids; if yours doesn’t heat the water to the temperature called for, let the butter melt in it before adding.

Set for a Basic/White cycle and a medium crust.

Once baked, remove, knock out, and let cool on a wire rack.

Store in a bread bag once cooled.

Makes one 1½ pound loaf.
