Gluten Free Banana Muffins

I have found if I prepare muffin batter in the blender, the boys will eagerly eat oatmeal based muffins, where as prepped in a mixing bowl, they see the oats and fuss over it. A trick I am happy to work with, that also saves me time and cleanup.

Gluten Free Banana Muffins

Ingredients:

  • 2 cups gluten-free old-fashioned oats
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 ripe bananas
  • 1 large egg
  • ¼ cup melted coconut oil
  • ½ cup maple syrup
  • ½ cup gluten-free granola

Directions:

Preheat oven to 375°, line a muffin tin with liners.

Add all ingredients except for the granola into a high-speed blender. Process until smooth.

Divide between the baking cups evenly.

Sprinkle on the granola, over the tops.

Bake for about 20 minutes, or until golden on top.

Let cool fully if freezing for later use.

Makes 12 muffins.
