Apple Cake

There’s nothing quite like the ease of a sheet cake. It’s not fancy, but oh the taste is! The apples are the main feature, with the batter holding them together. It’s a moist and dense cake you will love whipping up.

Apple Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp fine sea salt
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp baking soda
  • ½ cup unsalted butter (1 stick), softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 6 cups unpeeled apples, in bite size chunks*, preferably a crisp variety

Directions:

Preheat oven to 350°. Lightly spray a 9×13″ glass baking dish with oil.

Whisk flour through baking soda in a bowl, set aside.

Beat butter in a stand mixer till soft. Add in sugar, beat in, then add eggs.

Beat in flour mixture until smooth.

Add in apples, fold in by hand using a sturdy spatula.

Spread thick batter into the prepared baking dish, smoothing out with the spatula.

Bake for an hour, when done the cake is gold brown on top, and doesn’t look wet on top. If needed, bake for an extra 10 minutes (if the apples are juicy you may need to).

Let cool before cutting. Store leftovers in the refrigerator.

*Figure about 6 average sized apples for the recipe. Leave peel on, quarter and core, then chop.
