Banana Cake Slathered With Cream Cheese Frosting

Banana Cake

  • 1/3 cup avocado oil
  • ½ cup raw honey
  • 2 large eggs, room temperature
  • 1 cup mashed ripe banana (2-3 bananas)
  • ¼ cup milk
  • 1 tsp pure vanilla extract
  • 1¾ cups flour (I used a 50/50% blend of all-purpose and whole wheat flours)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • ½ tsp ground cinnamon

Preheat oven to 350°. Lightly oil a glass 9″ pan.

In a large bowl whisk together the oil, honey, eggs, banana, milk, and vanilla.

In a small mixing bowl whisk together the flour, baking powder, baking soda, salt, and cinnamon.

Add the dry to the wet, stir until just mixed.

Scrape into the prepared pan, smooth out.

Bake for 35 to 45 minutes, until golden on top and a toothpick in the center comes out clean.

Let cool on a rack before frosting.

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 2 Tbsp unsalted butter, softened
  • 1½ cups powdered sugar
  • 1 tsp pure vanilla extract

Add the cream cheese and butter into stand mixer bowl, beat until smooth.

Add in powdered sugar, beat on low until mixed, add in vanilla, then beat on medium-high until smooth and light.

Frost cooled cake as desired.

Store frosted cake and any leftover frosting in refrigerator.
