A while back, Kirk picked up the double box deal of Kodiak Pancake Mix from Costco, and one can only make so many waffles…so I was reading the box and saw the muffin recipes and decided to try them out.
It makes a really nice muffin, nicely dense and not sweet, yet just enough to feel like dessert. Still contains sugar, but it’s at least a bit better in that it also contains protein.
Protein Banana Chocolate Chip Muffins
Ingredients:
- 2 cups Kodiak Pancake Mix
- ½ cup unpacked brown sugar
- ½ cup semisweet or dark chocolate chips
- 1 tsp ground cinnamon
- ¾ cup milk
- ¼ cup melted unsalted butter
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 large ripe bananas, mashed
Directions:
Preheat the oven to 350 ° and line a 12-count muffin tin with parchment paper liners.
Add the dry ingredients to a large mixing bowl and whisk them together until well combined.
Add the wet ingredients to a small mixing bowl and whisk until combined.
Add to the dry mixture and use a spatula to combine.
Divide between the tins, about ¼ cup each.
Bake for 20 to 25 minutes, until golden on top.
Let the pan cool on a wire rack for a bit, then remove it and let it finish cooling on the rack.
Store tightly sealed.
The muffins freeze well for later eating.
Makes 12 muffins.
